Butternut Squash Soup
Butternut squash cut into pieces
Bell peppers..cut into pieces
Coat in olive oil n bake until tender.
Other Ingredients:
Dry Oregano
Dry Basil
Chili flakes
Cinnamon powder
Chopped onion
Chopped coriander
Oil and butter for sauteing
In a pan, add some oil, butter and cook the onions.
Next add the roasted butternut squash and bell peppers.
Mix well then add some vegetable, chicken or beef stock to cover the vegetables.
Let the Vegetables simmer for a few minutes then turn the stove off and blend the vegetables using an immersion blender.
Then turn on the stove and let the soup simmer.
Add the spices and coriander and continue cooking.
The soup is now ready.
