Coconut Jam Cake

Coconut Jam Cake
Ingredients:
1 and a half cups butter
2 and a half cups icing sugar
1 packet vanilla sugar
5 eggs
1 tbsp baking powder
A quarter cup of milk
2 and a third cups flour

Method:
In a mixer, add the butter and sugar and mix until light and fluffy.
Next add the vanilla sugar and baking powder and continue to mix.
Then add one egg at a time, mixing well after each egg addition.
Now add the flour and mix well.
Finally add the milk and continue to mix.
Pour the batter in a prepared pan and bake at 350 degrees for about 35 minutes or until toothpick inserted comes out clean.
Once ready remove the cake from the oven and let it cool for a few minutes.
Then gently poke holes on the cake using a fork.
Now spread some strawberry jam on the cake, if the jam is too thick, add some water to it and mix well, then spread the jam evenly on the cake.
Then sprinkle some desiccated coconut.
