1 cup flour
1 cup yoghurt
1 cup semolina
1 cup sugar
1/2 cup desiccated coconut
1/2 cup vegetable oil
2 tsp baking powder
1 packet vanilla sugar
For the sugar syrup
One and a half cups sugar
One and a half cups water
2 tbsp lemon juice
In a pot, add these ingredients and cook until it’s somewhat sticky. Keep aside.
In a mixer beat the eggs and sugar until creamy and pale in colour.
Next add oil and beat for a few minutes
Then add vanilla and yogurt continue to mix.
Next add the baking powder and mix.
Finally add the flour, desiccated coconut, semolina and mix well.
Now grease your pan and pour the basbousa in.
Add the mixture and let it rest for 10 minutes
Bake 350 degrees for 40 minutes until brown.
Remove from the oven and let it rest for a few minutes.
Gently cut lines through the basbousa and pour syrup over top.
Let it rest again so that the basbousa will soak up the syrup.
Serve it when its warm or at room temperature, do not cut the basbousa when it’s how, it will fall apart.
