Chicken Parmesan
Chicken breast
Lemon pepper seasoning
Garlic powder
Curry powder
Marinate the chicken breast with the above ingredients.
In a pan, add some oil and place the pan on medium heat stove.
Add the marinated chicken breast to the pan and cook both sides until crusty. The chicken breast doesn’t have to be fully cooked at this point. Remove the chicken breast and keep aside.
For the sauce:
.Salsa..I used salsa because it’s full of flavour but you can use crushed tomatoes.
..Grated mozzarella cheese
In the same pan you used to cook the chicken breast, add some oil and cook the salsa.
Since I’m using salsa, I didn’t need to add any seasoning because it’s already full of flavour but if you are opting for crushed tomatoes, use any seasonings you want to add flavour.
Cook the salsa for a few minutes then add the chicken breast and cook on low stirring occasionally.
If needed, you can add water and cook until the chicken breast is fully cooked and there’s just enough amount of sauce left.
Now scoop some sauce and put it on top of the chicken breast and cover with grated mozzarella cheese on top.
Place the pot with the chicken in the oven just to melt the cheese.
Once the cheese is melted, remove from the oven and serve.
I served it with pasta.
