Samaki wa kupaka (grilled fish with coconut sauce)
Ingredients.
A large fish (whole)
Ginger/garlic paste
Ground black pepper
Salt
Lemon juice
A few tbsp of oil
Method:
Clean the fish and lightly slice the fish, giving the fish cuts not all the way through (mitai), this will help the fish obtain more flavour. Do it on both sides.Mix all the ingredients and marinate the fish.Next, bake the fish in the oven until it is well cooked.
For the sauce:
Thick coconut cream/milk
Ground green chilies
Garlic paste
Salt
Lemon juice
Turmeric powder
Method:
In a pot, add the coconut cream, the garlic, chilies, salt, turmeric and lemon juice.Cook until the sauce thickens, taste for salt and lemon before removing from the stove.
When the sauce is thick, remove from stove.
Now carefully coat both sides of the fish with the Coconut sauce and bake in the oven for a minute or so.
Now remove from the coated fish from the oven and serve as a side to many dishes.
Traditional the fish is cooked by grilling over a charcoal stove/grill and the sauce is also applied over the fish on the charcoal grill but the oven method is an easier option and also an option for those who don’t use charcoal stove/grill.
Also the amount of ingredients will depend on the size of the fish.
