Tomato Soup

Tomato Soup
8 to 10 chopped tomatoes
1 large onion..chopped
4 celery sticks..diced
Chopped coriander
Dried oregano
Dried basil
Vegetable stock
A third cup oil for sauteing
2 tbsp butter or margarine

In a pot, add the butter and oil followed by onions.
Cook the onions for a few minutes then add the celery.
Continue cooking and mixing.
Next add the chopped coriander and the spices and continue mixing.
Next add the tomatoes and mix well. Continue cooking for a few minutes.
Then add enough vegetable stock to cover the tomatoes. The amount of vegetables stock added will determine how much soup you have, so add according to how much soup you want and some more keeping in mind liquid reduces when cooked.
If you don’t have vegetable stock you can add water but vegetable stock adds lots of flavour to the soup.
Cover the soup and let it simmer until everything is soft.
Turn the stove off and remove the vegetable chunks and place them in a food processor.
Blend until smooth then add them back to the soup and continue simmering.
At this point the soup should be ready.
