Egg Drop Soup with Crab Meat
Cooked/boiled crab meat
Corn kernels
Garlic ginger paste
Ground black pepper
Oil for sauteing
Corn starch
Green onions
Vegetable stock

In a pot, add the oil and cook the garlic ginger paste, before it turns colour, add the corn and cook for a minute or so.
Next add the enough vegetable stock or water and continue to cook. Remember the amount of liquid added will be the amount of soup you have, give or take a little.
Then add the corn, salt, pepper and crab meat and mix well.
Let it simmer for a few minutes.
In a bowl, add some corn starch and water and mix.
Pour the corn starch mixture in parts into the soup mixing well.
The soup will start to thicken, you should have a liquid glue like
Consistency, you don’t want the soup to be thick just thick enough to give the soup some consistency. So add the corn starch in parts.
Let the soup Simmer for a few minutes then add the beaten eggs mixing well.
Simmer the soup for a few minutes and it’s ready to serve.
At this point you can add the green onions and gently mix.
You can use some of the green onions to garnish the soup.
You can add the ingredients in any amount to suit your taste.
