Cream of Broccoli

Cream of Broccoli
Half cup plain flour
3 cups milk
2 cups cream
Ground black pepper
4 tbsp butter or margarine
Broccoli florets pieces

In a pot, add the broccoli florets and water to cover.
Bring to a boil and turn the stove off once it boils.
You don’t want to overcook the broccoli.
In another pot, melt the butter and add the flour, mix well.
Next add the half the milk and half the cream and mix well stirring constantly. You will notice it will begin to thicken.
Add the salt and pepper and mix well.
Add the remaining cream and milk in parts until the desired thickness is reached. If you have added all the milk and cream and the mixture is still thick, you can add more milk.
Finally add the boiled broccoli without the water to the creamy mixture and mix well.
Let the soup simmer for a few minutes stirring every once in a while so it doesn’t stick to the pot.
The soup is ready when everything is well cooked together and the desired thickness is reached.
Serve the soup with a side of crackers or any bread.
**If you don’t want to use cream, you can substitute the it with more milk.
