Udon Noodles

Udon Noodles:
Chopped onions
Garlic/ginger paste
Chili flakes
Salt and black pepper to taste
Soya sauce
Teriyaki sauce
Vegetable oil
Chopped coriander

In a pot add water with some of oil and salt and then turn stove off. Drop the the noodles in the boiling water and let them soften for 5 to 7 min. Drain water and let the noodles to rest for another 5 to 7 min.
In a wok add some oil and heat on the stove.
Add the garlic/ginger mix, onions, chili flakes, salt and black pepper and cook until the onions are about half cooked. Then add the noodles, soya sauce, teriyaki sauce and cook on medium/high heat stirring to ensure the noodles do not stick.
Once the noodles are properly coated with the sauces, add the chopped coriander and mix with the noodles.
You can add some more chopped coriander or green onions to garnish when done.
Serve with a side of meat, chicken or seafood.
