Mikate ya Pembe
Ingredients:
3 cups flour
A pinch of salt
1 teaspoon baking powder
1 egg
Three quarter cups coconut powder
One an a third cups water..you can add less or more if needed until you get a soft dough.
Method:
In a mixer add all the ingredients except water.
Mix well then add the water in parts and continue mixing until you get a soft dough.
Divide the dough into seven parts and shape them into balls.
Cover and let them rest.
Now take a dough ball and roll it out into a circle, then spread some ghee and sprinkle some sugar on top.
Now bring one end of the circle to the middle.
Then bring the other end of the circle to the middle as well and overlap the first end. Now a long rectangular shape is formed.
Now bring the left end of the rectangle to the middle and bring the right of the rectangle to the middle to overlap the left end.
At this point a square shape is formed.
Now roll out each square to make somewhat thinner (not too thin) and bigger squares.
In a frying pan, add some ghee and Cook the mikate both sides until well cooked and golden in colour.
