Oven Baked Leg of Lamb

Olive oil
Ground cumin
Ground coriander
Curry powder
Lemon pepper salt
Ginger/garlic paste
Crushed chilli flakes
Ground black pepper

Marinate the lamb with the above ingredients.
Bake in the oven covered (checking on it every once in a while) until soft and tender.
I used a turkey roasting pan, the one that comes with a wire rack inside, I added some water in the pan, then place the wire rack inside over the water then placed the leg of llamb on the wire rack inside the pan and cover the pan. Then baked it in the oven. The water helps in giving some moisture and speeds the cooking process.It takes a few hours for the lamb to cook, so timing is important.
