Biscoff Lotus Drip Cake

-2/3 cups softened margarine
-1/2 tsp salt
-1 tsp vanilla sugar
-4 eggs
-1 and a half cups sifted flour
-1 and a quarter cups icing sugar (if you don’t have icing sugar just take regular sugar and give it a rough blend in a coffee grinder)
-3/4 cup milk mix with 1 tsp white vinegar to make buttermilk.
-1 tbsp baking powder
-2 tbsp crushed biscoff Lotus cookies
In a blender, add the eggs, buttermilk, icing sugar and mix well until smooth.
In a mixer add all the remaining ingredients except the flour and crushed cookies, mix well.
Now pour the egg mixture into the mixer and mix well. Add the flour and mix. Add the crushed cookies into the mixer and gently mix.
Now pour the mixture in a prepared baking pan.
Bake in a 350 degrees oven for about 30 minutes or until toothpick inserted comes out clean.
Once the cake is ready, take it out of the oven and let the cake cool completely before decorating it.
I used white frosting, biscoff Lotus spread and biscoff Lotus cookies to decorate the cake. You can decorate the cake anyway you want.
