Potato Bowls
Russet potatoes..large or medium size
Olive oil
Diced green onion..about 1 large green onion
Diced bell peppers..Just a handful
Ground black pepper
Grated cheese
Chopped coriander

Wash the potatoes and rub them with olive oil.
Place the potatoes in a baking sheet and bake them whole until they are soft (not too soft) to touch.
In a frying pan, add some olive oil and cook the green onions and bell pepper. Add salt and black pepper and mix well.
Keep this mixture aside to cool.
Once the potatoes are ready, take them out of the oven and let them cool.
Then cut the potatoes into halves and place them in a baking sheet.
Gently scrape out the middle part or the potato and avoid cutting the potato skin.
You don’t have to scrape the entire potato you can leave some potato flesh with the skin.
Now mash the scraped potato flesh and add the bell pepper mixture. Mix well and taste for salt.
Now spoon the mashed mixture and place in each potato skin, top up with coriander and the grated cheese.
Bake in a 350 degrees oven for about 8 minutes or until the cheese has melted.
Serve it as a side dish.
