Roasted Vegetables
Ingredients:
Cauliflower
Broccoli
Carrots
Different coloured bell peppers
Coriander
Olive oil
Lemon pepper salt or any spice you want
Method:
Cut all the vegetables into decent sizes.
Place the vegetables (except the broccoli) in a baking sheet, hard vegetables in same baking sheet and soft ones in another sheet.
Sprinkle with olive oil and the spice of your choice either salt and ground black pepper or any other spice.
Bake in a 450 degrees oven until the vegetables are kind of soft and crunchy. Remember to check on the vegetables once in a while while roasting.
In a frying pan, add some oil and place the broccoli in the pan and cook them for a minute or two, the broccoli don’t need to be fully cooked. You can also season the broccoli.
Now remove the broccoli from the pan and the other vegetables from the oven when ready.
Let the vegetables cool.
In a big dish, mix all the cooled vegetables and add chopped coriander and mix well.
Serve the vegetables as a side dish to many meal menu.
