Vegetable Wet Rice

Vegetable Wet Rice
Ingredients:
Shrimp
Diced onion
Diced green onion
Diced yellow and red pepper
Frozen peas
Frozen corn
Chopped coriander
Cauliflower..cut into small pieces
Turmeric powder
Cumin powder
Salt
Oil
Ginger/garlic paste

Method:
In a skillet or pot, add some oil and cook onions until soft then add ginger/garlic paste and mix well.
Next add all the remaining vegetables but one at a time, stirring well at each addition.
Then add all the spices along with the shrimp and mix well.
Next add the rice and cover with water.
Cook until the rice and shrimp are well cooked and no or little water is left.
Add the coriander and mix well.
Cover and cook on very low heat until the rice is well cooked.
The vegetables makes the rice sticky and somewhat wet thus the name “WET RICE”.
The best rice for this recipe is not basmati rice but plumpy rice.
