Lemon Drop Cookies

Lemon Drop Cookies:
1 cup butter..at room temperature
1 packet vanilla sugar
3/4 cup sugar
1/2 tsp salt
2 cups flour
Half tsp lemon essence
Orange or yellow food colour
In a mixer, beat butter and sugar until light, then add the vanilla sugar, salt and mix well.
Add the flour and mix well until it becomes crumbly.
Now flour a surface and pour the crumbly dough on the surface, knead with your hands to form a ball.
If the mixture forms into a ball in the mixer, omit the kneading on the surface part.
Now divide the dough into two equal parts.
Take one part and add the lemon essence and the food colour, then knead well to form a ball.
Shape the two coloured doughs anyway you want.
You can even make all the dough orange instead of leaving it plain.
After shaping the cookies place the cut cookies in a baking sheet and refrigerate for at least 30 minutes before baking.
Bake the cookies at 350 degrees for about 17 minutes.
Let the cookies cool completely before removing them from the sheet.
