Ingredients for the meatballs:
Mix all these ingredients and form the mixture into ball shapes.
Place the meatballs in a deep dish oven safe pan and bake them until well cooked.
Once done remove the meatballs from the oven and keep them aside.
You can also cook the meatballs on the stove if you don`t have an oven.
For the Curry:
2 tbsp mayonnaise
Lemon pepper seasoning
Ginger n garlic paste
Fried onions like the ones used in biriyani
Mixed ground spices
Lemon juice (optional)
1 and a half cups shredded carrots
In a blender add all the ingredients except the chopped coriander and only add half the carrots and save the other half for later use.
Blend until smooth.
In a pot, add some oil and pour the blended mixture along with the remaining carrots and until until the curry has started to thicken.
Next add the fried onions and mix well then continue to cook.
Then add the meatballs and it`s juices if any and mix well.
Now add the coriander and mix.
The curry is ready when everything is well cooked and the curry has reduced to desired thickness.
For the rice:
Rice..washed and drained
Yellow food colouring
In a pot, add some water, some cooking oil and some salt.
Bring to a boil then add the rice and cook until 70 percent done.
Drain away the water.
Now layer the rice in a pot beginning with some ghee then rice then food colouring the fried onions then more ghee then rice and repeat the process until all the rice is in the pot.
Bake in the oven until well done.
Remove and serve it with the meatball curry.
