Carrot Rice


Carrot Rice:
3 cups rice..washed and drained
2 cups shredded carrots
8 whole cardamom
4 pieces whole cinnamon
Chopped coriander
Diced onion
Turmeric powder
Curry powder
Cooking oil

In a pot, add the water then add some oil, about 4 cardamom, 2 cinnamon sticks and some salt. Bring the water to a boil, then add the rice and cook the rice until 70% done. Drain the water away.
Now in a frying pan add some oil and cook the onion until soft then add the spices.
Now start layering the rice. In a pot, add some of the onion, oil and spice mixture then the rice then the shredded carrots the the chopped coriander and repeat the process in this manner until everything is in the pot.
Bake the rice until well done.
Once ready, remove from the oven and let the rice rest for a few minutes then gently mix so everything gets mixed together.
Serve with your favourite curry.
