Black eyed peas (soaked overnight)
Salt to taste
1/2 tsp curry powder
Oil for frying.
Wash the soaked black eyed peas and put them in a food processor.
Add the onion, half the coriander, salt, curry powder and the green chilies.
Blend together but do not over blend.
Heat the oil in a deep frying vessel and start deep frying them when the oil is nice and hot.
Simply take some of the mixture and make a medium size ball, add a whole chili and press it down a bit and cover the chili with the mixture and make a nice shape and then drop it in the hot.
Repeat this until you have a vessel full of bajias.
Turn the bajias around so they cook both side.
Take them out of the oil when they golden brown and cooked inside.You can always taste one to see if it’s well cooked.
Drain them in a paper towel and serve them with chutneys.
