Bolani
(Pan fried Afghani flatbread stuffed with mashed potatoes)
Ingredients:
For the dough:
2 cups flour
2 tsp oil
1 tsp baking powder
Salt
1 cup water
Method:
Mix the above ingredients and knead into a soft dough.
Oil your hands a bit with cooking oil, shape the dough while oiling it using your oiled hands.
Cover and let the dough rest for about 3 hours.
Then divide the dough into 6 balls.
Roll each ball on a floured surface.
Roll as thin as possible.
Then spread mashed potato filling to the rolled ball and fold into squares.
How you fold it is bring one end towards the middle, then bring the other end towards the middle as well so that the sides kind of overlap each other. Now bring the side end towards the middle to seal and the same with the other side.
Oil a frying pan and cook the breads on medium heat. You can use ghee to slightly give them a glow and sheen.
Cook both sides of the bread.
For the mashed potato filling:
Boil potatoes until soft.
Peel them when they are soft and still warm.
Add salt, ground black pepper, lemon juice, turmeric powder, chili powder and mash the potatoes mixing everything together.
The filling is ready.
