Spinach and Cheese Spiral Pie
Spinach n Cheese Spiral Pie:
1 packed phyllo/filo dough..thawed to the boxes instructions.
3 packets of spinach..chopped, washed and drained.
5 to 6 tbsp cottage cheese
1 large onion..diced
1/2 cup melted butter.
In a pot place the spinach, onion, salt and cook for a few minutes.
Then pour the spinach in a strainer and drain the water away. Squeeze out any excess water from the spinach.
Let the spinach cool. Add the cottage cheese to the spinach and mix.
Now place one sheet of thawed filo dough on a cutting board or table top then lightly brush it with melted butter. Repeat the process by placing 2 more filo dough sheets on top of one another while buttering each sheet prior to placing the next one. Butter the top third sheet as well before placing the spinach filling.
Add some of the spinach filling along the width of the dough. Roll tightly until the end. Now take a round baking pizza pan brushed with butter and place the rolled filled fillo. Begin shaping it in the middle and repeat the process of filling rolling and shaping the fillo dough. Once the process of filling and shaping is finished, brush the top with butter as well. Bake in the oven at 350 degrees until it is almost golden brown. At this point, you can turn your oven to broil and bake until it is golden brown.
Serve warm with a lemon wedge or any chutney.
