Chocolate Mint Cookies
Half cup margarine
1 cup white sugar
Half teaspoon peppermint extract
1 and a quarter cups all-purpose flour
Half cup cocoa powder
A quarter teaspoon saltMethod:
In a mixer, add the margarine and beat until soft.
Then add the sugar and mix well with the margarine.
Add in the egg and the peppermint extract and mix well.
Now add the flour, cocoa, salt and mix well.
Then divide the dough into two and roll into cylinders.
Wrap up the cylinders in parchment paper individually and refrigerate for 5 hours.
Then cut the cylinders into somewhat thin circles and bake them at 350 degrees oven for about 10 to 11 minutes.
Then dip the cookies while still a bit warm in chocolate ganache and let the ganache dry out.
Store the cookies in a container and store them in the fridge so that the ganache doesn’t melt.
The chocolate ganache I used in this recipe is
1 cup chocolate chips
5 tbsp margarine
Place these two ingredients in a pot and place the pot on a low heat stove, mix well until the chocolate has melted and everything is well mixed.
The ganache should not be thick nor thin.
