Corn Bread Cupcakes








Corn Bread Cupcakes:
1 cup plain flour
1 cup corn flour (unga wa sima)
1 cup sugar
1 cup milk
1/2 cup oil
1 tbsp baking powder
1 packet vanilla sugar or 1 tbsp vanilla essence
4 eggs
In a mixer, add the eggs, sugar, baking powder, vanilla sugar and beat until light and fluffy.
Next reduce the speed of the mixer and add the milk, oil and continue mixing for a minute.
Then add the plain flour and corn flour and mix well.
Pour the batter in a prepared cupcake pan and bake in a 350 degrees oven for somewhere between 25 to 30 minutes or until toothpick inserted comes out clean.
Let the cupcakes cool before removing them from the pan.
