Lemon Shortbread Cookies
LEMON SHORTBREAD COOKIES:
-1 and a half cups butter
-250 gm icing sugar
-3 cups flour
-1 packet vanilla sugar or 1 tsp vanilla essence
-1 tsp lemon extract
In a mixer, beat the butter, vanilla, lemon extract and sugar until light and creamy.
Then add the flour in parts and mix well.
Place the dough in the fridge for about 45 minutes . Then shape the cookie dough into any shapes you like and then bake at 350 degrees for about 7 to 15 min or until the bottom of the cookies start to turn to golden colour.
Let the cookies cool before removing them from the cookies sheet.
