Fish and Coconut Pilau








Fish n Coconut Pilau
4 cups Basmati rice
2 large potatoes (peeled and diced)
1 onion (diced)
Cardamom (whole)
Whole black pepper
Cinnamon Sticks
Whole cumin
Garlic powder or fresh crushed garlic
Fish steaks cut into chunks (Samaki wa vipande)
Salt to taste
Ground cumin
Ground black pepper
Ground mixed spices
1/3 cup oil
Coconut milk..enough to cook the rice.

In a pot, add the oil and cook the onion, fry until they start to soften, then add all the spices and potatoes, cook for a few minutes.
Add the fish and cook for a few minutes, now add the coconut milk.
Next add the rice and cook until its almost tender. ( if your rice is tender and you have excess liquid you can drain it, or if you have less liquid and the rice is still not tender you can add more coconut milk and continue to cook )
Place the pot in a 350 degrees oven and cook the rice until it’s well done.
Serve with salad and pickles.
**You can add the amount of spices you want to suit your taste.
**You can also omit some of the spices.
