Double Delight Vibibi








Double Delight Vibibi:
I call them double delight because they are made with milk cream and coconut powder.

1 and a half cups rice soaked overnight
1/2 cup coconut powder
1/2 a cup sugar or more
1 tbsp yeast
1 tbsp flour
1 egg
1/4 tsp ground cardamom
3/4 to 1 cup milk cream depending on the thickness of the batter you want.

Wash the soaked rice and drain the water away.
Put the rice and all the ingredients in a blender and blend till the mixture is crushed into very tiny pieces or smooth. Put the mixture in a bowl and let it puff up.
Once puffed up, you can use arepa maker to make the vibibi like I did or use a stove.
Method for cooking on the stove:
Take a small non stick pan and put a little bit of ghee, put a whole ladle full of mixture into the pan and cover it with a lid just for a minute. Take off the lid and again put some ghee and flip. Repeat this with the remaining mixture. Use medium heat to cook these.
Enjoy them with a cup of tea for breakfast or afternoon tea
