Crab Soup

Ingredients:
6 cups water
1 cup mixed frozen vegetables
1 and a half cups cooked crab meat..roughly chop the crab meat into chunks but leave some big chunks for garnishing the soup
Salt
Ground black pepper
2 eggs..beaten
1/3 cup oil
1 tbsp corn starch

Method:
Pour the water in a pot, place it on a stove and bring the water to a simmer.
In a wok, add the oil and cook the vegetables for a few minutes, then add the crab meat and continue cooking.
Now add the simmering water in the wok and season with salt and ground black pepper. Let the soup cook for a few minutes then add the beaten eggs and mix well. Try to not to add the eggs at one spot, pour the egg around the soup, mixing well.
Let the soup cook for a minute or two then add the corn starch mixture stirring well.
Continue cooking for a few minutes then turn the stove off and let the soup continue to cook on whatever heat is left from the stove.
Taste for salt before serving.
Serve the soup hot or warm.
Garnish the soup with big chunks of cooked crab meat.
I served my soup with fresh homemade flower buns.
