Date n Nut Ice Cream
Date n Nut Ice Cream:
Ingredients for the ice cream base:
1 box 473 ml whipping cream
1 can 300 ml condensed milk..to reduce the sweetness of the ice cream you can use the amount of the condensed milk.
6 tbsp date syrup..check your local supermarkets for the date syrup.
1/2 cup coarsely chopped dates
1/2 cup coarsely chopped pistachios
1/2 cup coarsely chopped almonds
In a mixer, add the whipping cream and whip until it is thick but the cream falls from the whisk, then add the condensed milk and continue to whip.
Stop whipping when the cream does not fall from the whisk and it has reached a soft peak.
Now pour the cream mixture into a freezable container.
Add 4 tbsp of the date syrup and gently fold in to mix.
Now add the nuts and mix gently.
Finally add the dates and gently mix.
For the ripple effect, sprinkle the 2 tbsp of the remaining date syrup over the top of the ice cream mixture. Take a butter knife and gently cut through the syrup and ice cream to give it a marble effect. Cover the ice cream and freeze it overnight.
