Creamy Onion Soup








Creamy Onion Soup:
3 large onions..peeled and diced
3 large potatoes..peeled and diced
2 cups milk
1 cup cream
4 cups water
1/2 cup oil
Ground black pepper
2 tbsp butter
3 tbsp flour

In a pot, add the oil and cook the onions.
Once the onions are soft, add the potatoes and continue cooking.
Add the salt and ground black pepper.
Next add the water, cover the pot and cook on low heat stirring once in a while until the potatoes are soft.
Once the potatoes are soft, remove the pot from the stove.
Now take another pot and melt the butter, then add the flour and mix well to make what is called a “roux”.
Mix well until the flour and butter mixes well together and thickens.
Now add the roux to the soup and mix well.
Next add the milk and cream and mix well.
Now take half of the soup and put it in a food processor and blend.
Then return the soup into the pot with the other soup and mix, this way you will have both texture and smoothness in your soup.
Now cook the soup on low just to warm it .
Garnish with diced green onions.
Serve hot or warm.
