Mkate wa nazi
Ingredients:
1 cup Masa flour (pre-cooked corn flour)…If you can’t find masa flour you can use regular corn flour. But I prefer masa flour for the taste and texture of the mikate.
1 cup shredded coconut
1 and a 1/4 cup water
1 small diced onion
Salt..to suit your tasteMethod:
Mix all the ingredients together except the water.
When everything is mixed well, add the water and continue mixing the ingredients until they are all well mixed..I used arepa maker to make these mikate but
you can either cook them on a frying pan or a griddle.
To cook them in arepa maker:
Just simply turn the machine on, then shape the mikate and place them in the arepa maker. Cover the arepa maker and cook the mikate until golden colour. You can flip the mikate on the other side to give the other side a nice golden colour too.To use a griddle..
Turn your griddle on medium high heat and then brush some vegetable oil, just to grease it.
Then wet your hands and scoop some of the mixture and shape it into a disc (desired thickness) or a triangle..You can make them any size or any thickness you want.
Now place the shaped mixture on the griddle and repeat shaping the remaining mixture and placing them on the griddle. Let one side cook before flipping the mikate to the other side.
When one side is cooked, flip the mikate to the other side, so that the other side cooks as well. You can keep flipping them until they are fully cooked.
The mikate are ready when they are well cooked. You can taste one to see if the inside is cooked.
Repeat with the remaining mixture..
