Red Velvet Cupcakes
Red Velvet Cupcakes:
1 and 1/4 cup flour
3/4 cup oil
3/4 cup sugar
1/2 cup buttermilk
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp white vinegar
1/2 tsp cocoa powder
1 tsp vanilla sugar or vanilla essence
Red food colouring..enough to give the batter a deep red colour.
How to make buttermilk:
*To make buttermilk, simply take 1/2 cup milk mix with 1 tsp vinegar and 1 tsp lemon juice mix and let the milk stand for a few minutes.
In a bowl, add flour, sugar, baking soda, cocoa powder, salt and mix well.
In a mixer, add the oil, buttermilk, egg, vanilla sugar, red food colour powder, vinegar and mix well.
Now add the flour mixture into the mixer and mix well to form a batter.
Divide the batter evenly into a cupcake pan and bake in a 350 degrees oven for about 20 minutes or until toothpick inserted comes out clean.
Cool completely before frosting.
Cream cheese frosting:
2 tbsp cream cheese
2 tbsp margarine
2 and 1/2 cups icing sugar
Mix these ingredients until creamy.
Put the frosting in a piping bag, cut the end of the bag and frost the cooled cupcakes, sprinkle some coloured sugar on top.
Makes 12 cupcakes.
