Red Velvet Cookies
1 and 3/4 cups flour
1/2 tsp baking soda
1 tbsp cocoa
1/4 tsp salt
1/2 cup margarine
1 cup sugar
1/4 cup sour cream
Red food colour..enough to give you a deep red colour
1 packet vanilla sugar or 1 tbsp vanilla essenceMethod:
In a bowl, add the flour,sugar, cocoa powder, salt, baking soda and mix well.
In a mixer, add the margarine, red food colour, vanilla essence, sour cream, egg and mix well.
Next add the flour mixture in the mixer and mix well until a cookie dough is formed.
Now scoop out the cookie dough using an ice cream scoop and place the balls in a prepared baking sheet.
Give them enough space as they will expand and spread. Make about 18 balls, bake them in a 350 degrees oven for about 15 minutes.
Let the cookies cool completely before removing them from the sheet.
Serve them plain or with cream cheese frosting on top.
For the cream cheese topping:
1 tbsp margarine..softened
1 tbsp cream cheese..softened
1 and 1/4 cup icing sugar.
In a mixer mix the cream cheese and margarine together until fluffy. Now add the icing sugar and mix well.
Top over cooled cookies.
