Potato Coconut Curry
Potato Coconut Curry:
Potatoes..peeled and cut into halves or big quarters
In a pot, cover the potatoes with water, add some salt and boil them until almost tender. Remove them from the heat and drain away the water.
Thick coconut milk
In a wok or pot, add some oil and cook the tomatoes for a few minutes.
Next add the tomato paste,spices, lemon juice and mix well.
Now add the potatoes and gently mix.
Add the coriander and parsley and mix.
Finally add the coconut milk and gently mix.
The amount of coconut milk will determine the amount of sauce in the curry.
Serve it as a side dish or a snack.
