Chicken Coconut Curry








Chicken Coconut Curry:
4 chicken breast..cut into pieces
Ground cumin
Tandoori masala
Garlic powder (optional)
Ground black pepper
1/3 cup oil
Marinate the chicken with all these ingredients including the oil.
Next place the chicken in a baking sheet and bake until tender. Remove the chicken from the oven and keep aside.

For the Curry:
1/3 cup oil
2 tbsp butter.. at room temperature
Ground cumin
1 tsp curry powder
4 tbsp yoghurt
6 tomatoes..cut and blended
1 to 2 cups thick coconut milk
Dry parsley..optional
Chopped coriander

In a pot, add the oil, margarine, tomatoes and cook for a few minutes. Then add the spices. You can add the amount of spices according to your preference (as little or as much) as you want.
Cook for a minute then add the yoghurt and continue cooking until the sauce starts to thicken a bit then add the chicken and mix well. Add the parsley and coriander and mix.
Then add the coconut milk either 1 or 2 cups depending on how much sauce you want. Mix well.
Cook for a minute or two and the curry is ready.
Serve with rice or naan bread.
