Date Bread
DATES FLATBREAD
Mikate Ya Tende:
5 cups flour
A pinch of saffron mixed in 1 tbsp water
1 tbsp yeast
1/2 tsp salt
1/4 tsp ground cardamom
1/3 cup oil
1 and a quarter cup milk
250 gm pitted dates soaked in 1 cup water (for about 5 to 10 minutes).Method:
In a food processor, add the soaked dates along with it’s water and mix until smooth paste.
In a mixer, add all the ingredients except milk and the date paste.
Mix well and then add the date paste mixture to the flour mixture.
Mix well then add the milk and mix until a dough is formed.
The dough should be just a tiny bit sticky.
Oil your hands and form the dough into a nice ball shape.
Also oil a bowl and place the ball in a bowl to let it rest.
Once puffed up, divide the ball into about 20 to 22 small balls.
Let the balls rise. Once risen, flour the surface and roll the balls out to somewhat thick discs.
Take a baking sheet and place a parchment paper on the baking sheet.
Now place the discs on the baking sheet, giving them space in between to rise when baking.
Bake them at 350 degrees oven for about 25 minute or until golden in colour.
Enjoy them warm or at room temperature.
Serve them with tea or your favourite curries.
