Almond Curve Cookies









3 tbsp melted and cooled butter
1/2 tsp almond extract
1/4 cup flour
1/4 cup ground almond
1/4 cup pistachio, finely chopped
1/4 cup sugar
1 egg white

Preheat the oven to 325 degrees.
Prepare your cookie sheets with parchment paper. Beat the egg white lightly with sugar, then add in the flour, pistachio, ground almonds, almond extract and butter. Mix into a soft paste. Place a tablespoon size of the mixture on the prepared sheet and use the back of the spoon to spread as thinly as possible. Bake in the preheated oven for about 10-15 mins until pale golden. Then quickly lift each cookie with a spatula then place over the side of the rolling pin to make the curved shape. When set, transfer to a wire rack to cool.
