Lemon Cake








3 eggs
3/4 cup sugar
1/2 cup margarine or butter (softened)
1/3 cup milk
1 and a half cups flour
1 tbsp lemon zest
1 and a half tsp baking powder
1/4 tsp salt

In a mixer, add the flour, eggs, sugar, butter, milk baking powder and mix at low speed until well mixed. Then add the lemon zest, flour and mix well. Then increase the speed for a few minutes.
Place the batter in a prepared pan and bake the cake in a preheated oven (350 degrees) for about 40 minutes or until toothpick comes out clean. Let the cake cool completely before frosting.

For the lemon frosting:
2 tbsp melted butter
2 tbsp lemon juice
1 and a half cups icing sugar
Mix these ingredients to make a spreadable frosting.
Then cream the top of the cake with the lemon frosting and sprinkle some desiccated coconut on top to garnish.
