Cake Rusks
4 eggs
1 cup sugar
1 tbsp baking powder
1 tsp vanilla sugar/ essence or almond essence
3/4 cup oil
1/4 cup milk
1 and a quarter cup flourMethod:
Beat the eggs, sugar and baking powder at high speed until fluffy, then reduce the speed to low then add the oil and the milk, continue beating for a minute. Then still at low add the flour in two additions mixing well after each addition.
Stop the mixer and scrape out the sides and bottom and continue mixing.
Next pour the batter in a greased baking pan and tap the pan so the batter sits evenly.
Now place the pan in a 350 degrees oven for about 30 to 40 minutes, or until toothpick inserted comes out clean.
Let the cake completely cool before cutting.
Once the cake is cooled, remove it from the pan and gently cut the cake into slices (see the picture for thickness estimation). Now place the slices in a baking sheet and bake them in a 350 degrees oven for about 15 minutes. After 15 minutes, remove the baking sheet from the oven and let the slices completely cool. They will harden once they cool. Serve them with tea.
