Mkate Wa Tambi

Mkate wa tambi:
Ingredients:
500 gm vermicelli noodles
5 cups water
1 cup sugar
1/4 tsp ground cardamom
1 tbsp ghee
1 cup coconut powder

Method:
In a pot or deep oven safe pan, add the water and coconut powder and mix. Then add the sugar and cardamom.Place it on a stove on medium heat and bring it to boil.
Break the vermicelli and add it to the boiling coconut milk.
The coconut milk should cover the vermicelli noodles.
Reduce the heat to medium low and let it cook, at this point you can gently stir the vermicelli.
Taste for sugar, if you need more you can add more.
When the liquid starts evaporating, stop stirring and put the stove on low heat.
When the liquid has completely evaporated, remove from heat and spread the ghee on top and place it in the oven at 350 degrees for about 30 minutes or until cooked and the sides have nice colour.
When it`s cooked turn the oven to broil and cook the top part to golden brown. Remove from oven and cover the top to avoid crusting on top.
Allow to cool completely before removing.
Enjoy!
