Saucy Grilled Fish:
This yummy saucy grilled fish is a must try recipe, easy to make and tastes so good. The method and taste is almost similar to the traditional Samaki wa Kupaka recipe. This dish goes well with rice, naan, chapati and all sorts of bread. The fish is well seasoned and the sauce is scrumptious.Ingredients:
For marinating the fish:
Fish pieces..I used mackerel fish
Garlic powder
Cumin powder
Ground black pepper
Curry powder
Salt
Lemon juiceMix all the above spices and marinate the fish pieces.

For the Sauce:
Tomatoes..diced
Curry powder
Turmeric powder
Salt
Chili powder
Cumin powder
Ginger/garlic paste
Tomato paste
Lemon juice

In a blender, add these sauce ingredients and blend until smooth.
You also need:
Oil
Chopped coriander
Heavy coconut milk

Method:
In a baking sheet line with parchment paper, arrange the marinated fish, bake the fish in a 450 degree oven and cook until the fish is well cooked.

In a pot add some oil and once the oil is hot, add the blended tomato mixture.
Cook the tomato mixture until it starts to thicken, then add the heavy coconut milk and mix well.
Add the grilled fish, chopped coriander and gently mix in the fish into the sauce. After adding the fish, let the sauce cook for a few minutes so that the fish can incorporate well into the sauce.
Serve this dish with rice or chapatis.
