Vegetable Cutlets









Vegetable Cutlets:
7 boiled potatoes
Spices for mashed potatoes:
1/4 tsp garlic powder
1/4 tsp ground black pepper
Add these spices in the potatoes and mash them while the potatoes are still warm.
Mix very well.

You also need:
-1/2 tsp of each:
Curry powder
Cumin powder
Ground black pepper
Garlic powder
-1 and a half cups frozen mixed vegetables..wash and drain
-2 stalks of green onions..chopped
1/3 cup oil
2 tsp bread crumbs

In a pan, add the oil and cook the onions until they start to become soft.
Next add the spices, bread crumbs and mix well.
Now add the vegetables and mix well.
Then add the coriander, dill and mix well.
Add the vegetables mixture into the mashed potatoes and mix very well.
Now shape the mixture into round patties.

You also need:
2 beaten eggs
Some more bread crumbs
Oil for frying
Heat up the oil in a karai.
While the oil is heating up, coat the patties in egg then bread crumbs.
Once the oil is ready, deep fry the coated patties.
You can gently turn the cutlets so that the other side cooks as well.
Once the desired colour is reached, remove the cutlets and place them in a plate with a paper towel on top, to coat any excess oil.
Serve them with your favourite chutney or lemon wedges.
