Mushroom Chicken Melt


Mushroom Chicken Melt:
1 cup sliced mushrooms
4 slices of bread
4 chicken pieces..I used drumsticks
Ground black pepper
1/2 cup grated mozzarella cheese
Water for cooking the chicken

In a pot add the chicken pieces, salt, ground black pepper, cover with water and cook until the chicken is well cooked.
Let the chicken cool and then take out the chicken pieces and pull out the flesh and throw away the bones.
In a non stick frying pan add enough oil to saute the mushrooms.
Once the mushrooms are cooked remove them from the pan and reduce the oil from the pan as we are going to use the same pan to saute the chicken.
Place the pan back on the stove and saute the chicken. At this point you can season the chicken again with any spices or sauces you like, I just used salt and black pepper.
Place half of the mushrooms in the pan along with the chicken. Also add the grated cheese to the pan. As soon as you add the cheese turn the stove of and let whatever heat is left to melt the cheese.
Prepare the slices of bread by spreading mayonnaise over them.
Now place the chicken mixture on two slices and cover with the remaining slices to make sandwiches.
Use the same frying pan to gently toast the sandwiches on low heat.
Toasting the sandwiches will give them a nice colour and give them a nice crunch.
Toast the sandwiches on both sides.
Serve the sandwiches with the remaining sauteed mushrooms.
