Savoury Swahili Crêpes
(Mikate ya maji ya chumvi):

Ingredients:
2 cups flour
2 cups water
3 eggs
Salt
Ground black pepper
Finely chopped Coriander
3 stalks of green onion..finely chopped
1 small onion..finely chopped
Melted ghee

Method:
In a large bowl, place the flour and add the eggs, then mix well.
Next add the water and mix very well to avoid any lumps.
Now add the remaining ingredients, along with 2 tbsp of ghee (leave the remaining ghee for cooking the crêpes).
Now take a non stick pan and grease the pan with some of the remaining ghee.
Next take one ladle full of the batter and pour it in the non stick pan, then hold the handle of the pan and gently but using fast hand move the batter to help it spread throughout the pan. Depending on the size of your pan, you might need more or less of the ladle.
Let the crêpe cook then add some more ghee on top and flip the crêpe.
Once both sides are cooked remove the crêpe from the pan and continue cooking the remaining batter, one crêpe at a time until all the batter is finished.
Serve it hot or warm with your favourite achari, chutney or even tea..
