Semolina Cookies (2)
SEMOLINA COOKIES:
Ingredients:
1 and a quarter cups plain flour
2 tbsp semolina flour
1/2 cup melted ghee
1/4 tsp baking powder
1 cup icing sugar
A pinch of salt
Method:
In a mixer, add the flours (semolina and plain), sugar, salt, baking powder and mix well.
Then add the melted ghee and mix until you get a soft pliable cookie dough. If you added the half cup melted ghee and your dough is still not together or pliable, you can add some more melted ghee but very little at a time until you get a soft pliable cookie dough.
Once you have your soft pliable dough, shape the dough into balls (any size you want) and gently press on the balls to give them a dome shape. The balls should not be flat.
Place the shaped cookies on a baking sheet and give the cookies some distance from each other, so that they have room to expand when baking. For the designs, I just used a fork and gently poked on each cookie to make the designs.
Bake them at 250 degrees for about 15 to 20 minutes or until the bottom of the cookies are slightly golden.
Don’t over bake the cookies as they will be hard when cooled.
When the cookies are ready, remove them from the oven and let them cool completely before removing them from the baking sheet.
