Creamy Tomato Soup
Creamy Tomato Soup:
1 head of garlic..peeled and thinly diced
1 cup cream
1 cup water
1 tbsp cornstarch mixed with 2 tbsp of water
1/3 cup olive oil
Ground black pepper
In a pan, heat the olive oil and add the onion.
Cook the onions until they become soft, then add the garlic and cook for about a minute.
Next add the tomatoes and cook for a few minutes, then add the salt and pepper.
Before the tomatoes start to dry up add the 1 cup of water and turn the stove off. Let what’s left of the heat to cook the tomatoes.
Next blend the tomato mixture and sieve the puree in a pot.
Place the pot of tomato puree back on the stove and cook on low heat.
Now add the corn starch mixture and mix well to avoid any lumps. Now add the cream.
Let the soup continue to simmer on low heat.
I sieved the soup again to give it a smooth consistency.
The soup is now ready to be served.
