Bean Sprout Veggie Rice

Bean Sprout Veggie Rice:
Ingredients:
4 to 5 cups rice
3/4 cup shredded carrots..don’t shred them thin, I bought mine ready shredded called matchsticks.
3/4 cup frozen peas
1/4 of each, red, yellow, orange bell pepper…cubed
1 onion diced
1/2 bean sprouts
4 sticks green onions..diced
Oil for cooking
Salt
Curry powder
Turmeric
Chopped Coriander

Method:
In a large skillet, add some oil, then cook the onions and green onion until the start to soften.
Next add the frozen peas and cook for a few minutes.
Next add the bell peppers and continue to cook.
Now add the bean sprout, spices, salt and continue cooking for a minute or two, now turn the stove of and add the chopped coriander.
In another pot, add water, some oil and salt and bring it to a boil, then cook the rice until half way done, now drain the rice and start assembling the rice with the cooked vegetables.
Put some rice then some of the cooked vegetables then rice and continue layering the veggies and rice in this manner. The top part should be rice.
Bake the rice in the oven until it is fully cooked.
Serve the rice with a side dish of chicken or meat..
