Vegetable Noodle Soup
VEGETABLE NOODLE SOUP
1 large onion..chopped
1/3 cup oil
Ground black pepper
1 cup diced carrots
1/2 cup vermicelli or any tiny pasta
1/4 tsp garlic powder
5 cups water
1 cube stock (vegetable, chicken or beef)
In a pot, boil the water and the cube stock.
In another pot, add the oil, sautee the onions until they become soft then add the potatoes and continue to cook.
Now add the carrots, bell pepper, salt, ground black pepper, garlic powder and continue to cook.
Taste for salt and when the soup is almost ready, add the vermicelli, zucchini and continue to cook.
The soup is ready when the vermicelli and zucchini are well cooked.
