Shortbread Cookies
SHORTBREAD COOKIES:
Ingredients:
-1 and a half cups margarine or butter (I used Margarine)
-250 gm icing sugar
-3 cups to 3 and a half cups flour ( I only used 3 cups flour for these ones)..So start with 3 cups and when you get a firm flaky dough then don’t add the half cup.
-1 packet vanilla sugar or 1 tsp vanilla essence

Method:
In a mixer, beat the butter, vanilla and sugar until light and creamy.
Then add the flour in parts and mix well.
Place the dough in the fridge for about 45 minutes . Then shape the cookie dough into rectangle shape (desired thickness), then cut into rectangle strips like the cookies, then use a fork to gently poke hole design all over the top of the cookie and then bake at 350 degrees for about 7 to 15 min or until the bottom of the cookies start to turn to golden colour.
Let the cookies cool before removing them from the cookies sheet.
