Creamy Potato Soup
Creamy Potato Soup:
6 potatoes..Peeled and cubed.
1 large onion
1/3 cup oil
Ground black pepper
3/4 cup shredded or cubed carrots
1/4 tsp garlic powder
1/4 any colour bell pepper
1 cup cream
In a pot, add the water, chicken cube stock and bring to a boil.
In another pot, heat up the oil and add the onions.
Cook the onions until they become soft then add the potatoes.
Cook the potatoes for a few minutes then add the carrots and continue cooking and mixing.
Next add the curry powder, garlic powder, salt and ground black pepper.
Mix well and continue cooking for a few minutes, then add the remaining vegetables (zucchini and bell pepper)
Now add the water boiled with the chicken stock cube.
Cook until the potatoes are soft then add the cream along with the chopped coriander.
The potatoes should be soft but not mushy.
The soup is now ready to be served.
