Coconut Caramel Jam Cookies


250 gm butter
4 eggs
1 cup oil
1 cup sugar
2 tbsp baking powder (level)
Flour…4 and a 1/4 cups

Jam preferably peach or pineapple jam..warm the jam in a pot
Shredded coconut
Caramel…I used store bought caramel

In a mixer beat the butter and sugar until light and fluffy.
Then add the eggs one a time, mixing well after each addition.
Next add the oil and mix well.
Now add the baking powder and continue to mix.
Finally add the flour in parts and mix well after each addition.
The dough should be soft.
Shape into very small strips and bake until golden..Let the cookies cool, then fill them with the caramel and make them into sandwiches, then coat them with the jam and finally coat them with the coconut as well. Let them cool before storing.
